I adapted this recipe from the feathered nester
I have used and modified this recipe! I absolutely love using it and making it into different things! We love cinnamon bread and chocolate chip bread as well!

Recipe:
Ingredients
- 1/3 cup active starter
- 1 1/3 warm water (filtered if possible)
- 1/4 cup sugar
- 3 1/2-4 cups bread flour
- 1 1/2 tbsp olive oil
- 2 tsp sea salt
- Add a tablespoon of cocoa powder if making double chocolate chip bread
Instructions:
- Add starter to a bowl and mix with warm water and sugar until dissolved. Add flour, oil, and salt. Mix with a dough hook.
- Flour hands and finish mixing dough. Cover with damp towel and let rest for 30-45 minutes
- Coax dough from the bowl and stretch and fold it 4 times. Return to bowl and cover back up. Let rise overnight at room temp for at least 8-10 hours and doubled in size.
- in the morning lightly flour the counter and coax dough from the bowl. Stretch into a rectangle and dimple the dough to release air. Roll into a log shape. ( i cut mine into 2 logs). Cover and let rest for 10 minutes. (This is where I add cinnamon sugar or chocolate chips depending on bread I’m making before I roll it up!)(add in chocolate chips here if you are making double chocolate chip bread) (I also loved the loaf I made with jalapeños and cheddar cheese added before rolling up!)
- Spray pans 9( i use avocado oil) tighten logs and transfer them into the pans. Cover and let rise for 1-2 hours until doubled in size.
- Preheat over to 375 degrees Fahrenheit.bake up to 45 minutes. after it’s pulled out of the oven let it sit for 10 minutes. Then tilt and remove from the pan and let cool on the cooling reach for an hour before cutting it to prevent deflation
